Make a Simple and Delicious Spinach Salad
A quick and easy salad that's flavorful, satisfying and colorful!

Ingredients
1 bag pre-washed baby spinach 1 cup sweetened, dried cranberries 1 cup coarsely chopped walnuts or pecans (can be toasted or candied) 1 cup crumbled goat cheese 1 large apple, chopped (I recommend Granny Smith or Macintosh) Dressing of choice served on side (I recommend a raspberry vinaigrette)
Note: Strawberries and/or raspberries in season are also delicious in this salad and can substitute for or be added in addition to the cranberries. Red grapes also make a great addition to this recipe. Mix it up and see what you like best! Preparation
Dump spinach into a colander; sift through and remove any leaves that look damaged, discolored or wilted. Rinse remaining leaves thoroughly; shake colander to remove excess water (may want to pat with a paper towel to dry leaves a bit more, or use a salad spinner). Transfer spinach to a large bowl and add all ingredients, toss. Transfer to individual bowls and add dressing as desired.
