Make Fettucine Alfredo
 
Fettucine alfredo is a simple but elegant meal

Ingredients  (Serves 4 to 6)


  • 1 lb. of fettucine
  • 1/2 cup of heavy cream
  • 6 oz. of Locatelli Romano cheese, ungrated
  • 1/4 cup olive oil
  • Butter, salt and pepper
  • Nutmeg

Instructions

  1. Bring a 4 quart pot of water to a furious boil;
  2. Stir in the pasta
  3. Add 2 tbs of oil
  4. When the pasta is firm ( al dente), remove and drain, shaking the pasta to remove excess water.
  5. In a large bowl, add the pasta, cream and salt and pepper. Toss thoroughly.
  6. Grate the cheese over the pasta as you toss, continuing to salt and pepper to taste.
  7. Add a pinch of nutmeg--the "secret ingredient" and toss.
  8. Add a final sprinkling of cheese and nutmeg and serve.
