Greek Chicken is a tasty, healthy, easy, and quick dish to make for 2 or for a family.
Serves 4
INGREDIENTS:
- 1/2 cup olive oil
- 3 cloves garlic, chopped
- 1 tablespoon chopped rosemary
- 1 tablespoon chopped thyme
- 1 tablespoon chopped oregano
- 2 lemons, juiced
- 4 boneless skinless chicken breasts
DIRECTIONS: - Preheat oven to 375 degrees
- Rinse chicken breasts and trim the fat from each piece
- Grease rectangle casserole dish
- Place chicken in casserole dish
- Drizzle lemon juice evenly over chicken breasts
- Sprinkle rosemary, thyme, and oregano over chicken evenly
- Slice thin pads of butter and place 2-3 pads on top of each chicken breast
Cook for 40-45 minutes or until golden brown on the outside and white on the inside. Let cool for 5 minutes and then serve. Add salt and pepper to taste. Sometimes a slice of Feta Cheese and some Greek olives on the side add good flavor.
