4 tablespoons Virgin Olive Oil
5 Fresh Garlic Cloves, Peeled and Crushed
1 Can Crushed Tomatoes
5 or 6 Fresh Tomatoes, cut up into 1/8-inch pieces
Sea Salt, to taste
Pepper, to taste
Parsley, to taste
1Teaspoon Sugar
2 Bay Leafs
Heat oil in deep pan and saute garlic until just golden brown. Pour in can of crushed tomatoes. Pour in fresh tomatoes. Add the remaining spices and ingredients. Bring to a boil and then simmer for 20 minutes, or until fresh tomatoes thicken and soften. Remove bay leaves before serving. Serve with linguini or spaghetti.
Wine suggestion: a young rosso di montalcino goes well with pasta and tomato sauce.
